 Gongfu style brewing is a traditional Chinese method that was first developed during the Song Dynasty and is from the famous tea producing region, Chaozhou, in the Guangdong province. This 90 minute workshop provides a deep dive on the history and significance of Gongfu brewing, demonstrations of how to brew tea Gongfu style with a teapot and gaiwan, and hands-on brewing experience with guidance. The workshop will describe how each step and tea wares are used to maximize the potential of a tea leaf and yield a cup of tea that defines the individual characteristics of a tea. The teas brewed during the workshop will be the famous Honey Orchid Phoenix Dan Cong Oolong and Da Hong Pao Wuyi Rock Oolong, which are signature teas that represent their respective regions.

This workshop will be taught by Imen, who founded Tea Habitat in 2007. Imen is well known as one of the top tea experts in America and has been features in many magazine articles including the LA Times, Eater LA, La Weekly, LA Magazine, Prior Magazine, Imbibe Magazine, and Vogue. She learned about Gongfu style brewing and Phoenix Dan Cong Oolongs from a Gongfu tea master born and raised on the slopes of Phoenix Mountain. She's also studied under various tea professors and researchers in China to learned about all tea types. Additionally, she has taken classes at the National Tea Research Institution in Hangzhou on tea blending, tea mixology, and aged teas.
